White chocolate chips and macadamia nuts cookies (English Version)

These delicious white chocolate and macadamia nut biscuits are super yummy, with their moist, soft and almost chewy interior and crispy golden edges, they are a delight to the palate. For adults they are great with a cup of coffee and for children with a cup of milk for an energetic breakfast/snack.

Ingredients:
300gr flour
230g butter at room temperature
150gr brown sugar
100gr granulated sugar
170gr macadamia nuts
170gr white chocolate chips
2 eggs
1/2 teaspoon of baking powder
2 tablespoons vanilla

Method:
Work the room temperature butter for a few minutes with the whisk or planetary, add the vanilla, mix and introduce the two types of sugar, (if the butter you are using is without salt, you can add here half a teaspoon of salt)work a couple of minutes, add the eggs and beat 2 minutes.

In the meantime mix the yeast into the flour, once the eggs have incorporated into the mixture, add the flour in two stages, and run on medium speed another 2 minutes.
Add the lightly chopped macadamia nuts and white chocolate chips and mix until incorporated into the dough.

Using an ice cream scoop, form into balls and place on a baking tray lined with baking paper, leaving enough space so that the biscuits do not stick together.
Bake in a preheated oven at 175° for 15/20 minutes.

Once this time has elapsed let them cool on a wire rack and they are ready to be enjoyed.❤️

Tazas de galletas rellenas de nutella (Versión en español)

Para los amantes de la Nutella, aquí están las tazas de galletas de Nutella, la sabrosa alternativa a las clásicas cookies.
Rápidas y fáciles de hacer. ¡¡¡Advertencia!!! Dada su bondad, una tira la otra😋.

Ingredientes:
190gr de harina
115gr de mantequilla a temperatura ambiente
100gr de azúcar
1 huevo
1 cucharadita de esencia de vainilla
1/2 cucharadita de bicarbonato de sodio
1 pizca de sal
Nutella para decorar

Preparación:
En un bol (yo usé la batidora planetaria) bate con el batidor de varillas la mantequilla con el azúcar hasta conseguir una mezcla ligera y homogénea, añade la esencia de vainilla, el huevo y mezcla unos segundos.
Incorpora la harina tamizada con el bicarbonato y una pizca de sal.
Trabaja durante unos minutos para obtener una mezcla homogénea.

Con la ayuda de una cuchara de helado (de 4cm de diámetro), o puedes pesar unos 20gr de mezcla, haz unas bolas y colócalas en la bandeja de mini magdalenas previamente aceitada.

Con el horno precalentado, hornea a 180 grados durante 12/15 minutos.

Una vez cocidos déjalos reposar unos minutos y con un vaso pequeño, un mini rodillo o el mango de una cuchara crea el hueco de la taza.

Rellena con Nutella o con otra crema de tu preferencia, yo también he utilizado nata y queso mascarpone, decóra al gusto.❤️

Cooking time: 12/15minutes

Ingredients:
190gr plain flour
115gr butter at room temperature
100gr sugar
1 egg
1 teaspoon of vanilla essence
1/2 teaspoon of bicarbonate of soda
1 pinch of salt
Nutella for garnish

Method:
In a bowl (I used the planetary mixer) work with the whips, the butter with the sugar until you get a light and homogeneous mixture, add the vanilla essence, the egg and mix a few seconds.
Incorporate the sifted flour with the bicarbonate and a pinch of salt.
Knead for a few minutes to obtain a smooth dough.

With the help of an ice cream scoop (4cm diameter), or you could weigh about 20gr of dough, make little balls and put them in the greased mini muffin tray.

With the oven preheated, bake at 180° for 12/15min.

Once cooked let them rest for a few minutes and with a small glass, a mini rolling pin or the handle of a spoon create the hole of the cup.

Fill with nutella or with another cream of your choice, I have also used whipped cream and mascarpone cheese, decorate as you like.❤️

Ingredienti:
190gr di farina
115gr di burro a temperatura ambiente
100gr di zucchero
1 uovo
1 cucchiaino di essenza di vaniglia
1/2 cucchiaino di bicarbonato
1 pizzico di sale
Nutella per guarnire

Preparazione:
In una ciotola( io ho usato la planetaria)lavora con le fruste, il burro con lo zucchero fino a ottenere un composto chiaro e omogeneo, aggiungi l’essenza di vaniglia, l’uovo e mescola qualche secondo.
Incorpora la farina setacciata con il bicarbonato e un pizzico di sale.
Lavora qualche minuto fino ottenere un impasto omogeneo.

Con l’aiuto di un porzionatore per gelato(4cm di diametro),oppure potresti pesare 20gr circa di composto, fai delle palline e inseriscile nel vassoio dei mini muffins precedentemente oleato.

Con il forno preriscaldarto inforna a 180° per 12/15min.

Una volta cotti falli riposare qualche minuto e con un bicchierino, un mini mattarello o con il manico di un cucchiaio crea il buco della tazza.

Riempi con la nutella o con un’altra crema di tua preferenza, io ho anche utilizzato la panna e il mascarpone, decora a piacere.❤️
